3rd place TNT Blackberry Pie

Oregon Berry PIe

Tina Huff of Turner, Oregon’s recipe won third place at the Oregon State Fair’s Blackberry Pie Contest in 2012.

Ingredients Preparation
Pastry for two crust pie

  • 2 cup flour
  • ¾ cup butter flavored shortening
  • 2 T lard
  • ⅛ tsp salt
  • ¼ cup ice-cold water
Crust Steps

  1. Mix the pastry, mix flour, salt, shortening and lard until it has a crumbly texture.
  2. Mix ice cold water, a tablespoon at a time, gently pulsing until dough comes together. Don’t over mix.
  3. Place in refrigerator for 30 minutes to chill.
  4. Roll out dough and line a 9-inch pie plate.
  5. Set aside leftover dough for top crust.
Filling

  • 4 cup fresh blackberries
  • ¼ cup flour
  • 1 cup sugar
  • 3 T butter
Filling Steps

  1. Preheat oven to 400 degrees.
  2. Combine blackberries, sugar and flour for the filling.
Assembly

  1. Add blackberry mixture to pie crust.
  2. Cut butter in ½ teaspoon strips and add on top of filling.
  3. Cover with top crust in the design of your choice.
  4. Bake uncovered for 50 minutes.
  5. Cover edges with aluminum foil if excessive browning occurs.
