Autumn Glazed Pork Loin

Pork with Raspberries

Warm up your fall and winter meals with a roast and Oregon berries.

Ingredients Preparation
Glaze

  • 1oz apple Brandy
  • 2cups frozen Marionberries or blackberries
  • 4oz Apple Cider
  • 1oz whole grain mustard
  • ¼ cup Simple Syrup *
Glaze Steps

  1. In saucepan add frozen berries bring to boil.
  2. Deglaze pan with apple Brandy until alcohol is gone, about 5 minutes.
  3. Add apple cider, mustard and simple syrup.
  4. Simmer sauce to reduce by three quarters, approximately 10 minutes.
Pork

  • 2-3 lb pork loin
  • Olive oil
  • Salt
  • Pepper
Pork Steps

  1. Place pork loin on rack in roasting pan, coat with olive oil; salt and pepper to taste.
  2. Pre-heat oven to 450 degrees, place prepared roast in oven for 10 minutes.
  3. Reduce heat to 250 degrees, cook pork loin for 20 minutes.
  4. Brush glaze on pork loin and continue to roast until internal temperature reaches 150 degrees.

  6. Slice pork and drizzle sauce over slices before serving.
* Simple Syrup

  • 1 cup sugar
  • 1 cup water
Syrup Steps

  1. In a small saucepan, bring sugar and water to a boil.
  2. Simmer until the sugar is dissolved, 3 minutes.
  3. Remove from the heat and let cool completely.
  4. Remaining syrup may be refrigerated for one month.
