Blackberry Breakfast Parfait

Rise & shine! The ancient grain farro lends a nutty flavor to this great day-break treat!  Our recipe for a Blackberry Breakfast Parfait can use fresh, frozen, or canned Oregon blackberries or raspberries for a convenient any-time-of-the-year go-to breakfast parfait.

Ingredients

1 Cup cooked and cooled farro
1 Tablespoon of agave or honey
1/8 teaspoon fine sea salt
1 Tablespoon lemon Juice
¼ teaspoon nutmeg
¼ teaspoon cinnamon
1/8 teaspoon cayenne pepper
2 Cups of plain Greek yogurt
1 Cup of fresh, frozen (thawed), or canned blackberries or raspberries

4 1-cup mason jars with lids or other 1 cup containers with lids

Preparation

Step 1
Prepare farro and let cool.

Step 2
In a small bowl combine the farro and 2 tbsp of the agave or honey, lemon juice, nutmeg, cinnamon, cayenne pepper and salt.

Step 3
In a 2nd small bowl, combine the yogurt and remaining agave or honey.

Step 4
Spoon 2 tablespoons of farro mixture into each jar, top with ¼ cup of the yogurt mixture and 2 tablespoons of berries. Repeat layers.

Step 5
Seal the jars with the lids and keep in the refrigerator for up to 5 days.
