Oregon Raspberry & Blackberry Recipes
Blackberry & Lime Jam
Makes approximately 4 pints
INGREDIENTS
4 cups Marionberry seedless puree or jam stock
2 Tablespoons lime juice
1-3/4 package fruit pectin
6 cups sugar
DIRECTIONS:
Combine jam stock, lime juice and pectin in an 8 quart saucepan.
Bring to a full rolling boil, stirring constantly. Add sugar all at
once. Cook and stir on high heat until mixture once again comes to
a full rolling boil. Boil hard for 1 minute. Remove from heat,
skim off foam and put into jars and seal.
