Marionberry Date Bars

Oregon berries and dates are an exceptional way to start the day or gain quick energy between activities.

Makes One 9”x13” Pan, 36 servings

Ingredients Preparation
Filling

  • 3 cups blackberries, whole (frozen or fresh)
  • 3 cups dates, chopped
  • 1/4 tsp salt
  • 1/4 cup water
  • 1 tbsp lemon Juice
Filling Steps

  1. Combine blackberries, dates, and water.
  2. Cook over low heat, stirring frequently, until dates and berries blend into thick puree.
  3. Add salt and lemon juice.
  4. Remove from heat and set aside.
Crust and Topping

  • 1 3/4 cup flour
  • 1 3/4 cup rolled oats
  • 1 cup brown sugar
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup butter, melted
Crust and Topping Steps

  1. Combine dry ingredients in medium sized bowl. Add melted butter or margarine and stir to crumb consistency.
  2. Pour slightly more than half the crumbs into a
    9 X 13 inch pan.
  3. Pat to form firm crust.
  4. Bake 350 degrees – 12 minutes.
  5. Spread filling over baked crust.
  6. Top with remaining crumbs.
  7. Bake 350 degrees – 25 to 30 minutes.
  8. Cool to room temperature.
  9. Cut and serve.

Tips and Tricks

Caneberries are raspberries and blackberries. Substitute either berry for great results in this recipe.
