Blackberry Hand Pies

Classic Blackberry Hand Pies are the on-the-go treat that pleases everyone! These are made with almond meal, adding a little protein boost to the delicious berries inside and making them a gluten-free treat! This recipe uses frozen Oregon blackberries to capture that fresh-picked taste all year long.

Ingredients

For the Crust

2 1/2 Cups almond meal/flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 Cup Organic palm oil shortening (I used Nutiva)
2 Tablespoons pure maple syrup
1 teaspoon vanilla extract

For the Filling

1/2 Cup fresh or frozen Oregon blackberries
1 Tablespoon honey

Preparation

Crust

Step 1
In a medium sized bowl, combine dry ingredients and set aside.

Step 2

In a small bowl, combine wet ingredients (melt palm shortening prior to mixing it into the batter).

Step 3
Stir wet ingredients into dry.

Step 4

Carefully knead dough into a ball, then gently roll out into a circle to 1/4 in’ thickness.

Step 5

Using a biscuit or circle cookie cutter, cut pie crust into circles. Cover with wet paper towel until filling is ready.

Filling

Step 1
Heat blackberries in a saucepan with honey over medium heat.

Step 2

Mash slightly & remove from heat when warmed.

Hand Pies

Step 1
Preheat oven to 375°F On top of one pie crust circle top with 1 tbsp. crushed blackberries. Top with another pie crust.

Step 2
Carefully seal edges using a fork.

Step 3
Brush with liquid from warmed blackberries. If desired, sprinkle with raw organic sugar.

Step 4
Bake at 375°F for 10–15 minutes, or until golden. Remove from oven to cool.
