Raspberry Coconut Smoothie

Ingredients

1 C frozen raspberries, plus more for serving
¾ C unsweetened coconut milk non-dairy beverage (not canned coconut milk)
2 t honey
½ t vanilla extract
Toasted unsweetened coconut, optional

Preparation

In a blender, puree berries, milk, honey, and vanilla until very smooth.

Step 2
Top with extra berries and toasted coconut, if desired.
